Operations Manager

I’ve been lucky enough to travel quite widely with Explore, but the list of places I want to visit never gets any shorter! Top of the list right now – and a place I’ve been desperate to get to for years - is Cuba. I love Latin America and have led tours elsewhere in Central America, but my yearning to explore Cuba goes right back to when I was given the Buena Vista Social Club album as a teenager. I find Cuba’s politics and history fascinating and I really want to visit before things open up and change (I also have a crazy dream that I might suddenly discover I’m a talented salsa dancer on the streets of Havana)!
When I travel I think I turn into a bit of a foodie…I’m always looking out for the local specialties. The meal I remember best was in Eritrea, where I was leading an Explore tour. We were in Massada, a town on the Red Sea which is famous for its beautiful but crumbling, Arab-influenced architecture. The local guide had told me about a restaurant in the old town that serves only fresh fish and bread and he encouraged me to take my group there. The restaurant itself was a small, empty room with an even smaller kitchen attached. We sat outside on the street at plastic tables surrounded by the local cat population and ate the best fish I have ever tasted, served with freshly cooked bread and a sauce of chillies and onions.
